Burns Road is famous for its food not only in Karachi but all over the country. Chicken/Beef biryani from Food Center is the highlight of the food served in Burns Road. Today, I am posting the recipe of Food Center Biryani which we all love. I hope you will enjoy this one!<br />

<li>Chicken/Mutton/Beef 1 kg, washed and cleaned, cut into pieces</li>
<li>Basmati rice 1 kg, soaked for 15 - 20 minutes</li>
<li>Potatoes (medium sized) 4, steam lightly, peel and cut into large pieces</li>
<li>Tomatoes<span style="white-space: pre;"> </span> (medium sized) 6, cut into 4 pieces each</li>
<li>Onions 4 medium, finely sliced</li>
<li>Mint (podina) 1 bunch, finely chopped</li>
<li>Green chilies<span style="white-space: pre;"> </span>6 whole</li>
<li>Ginger garlic paste<span style="white-space: pre;"> </span>1, 1/2 tbsp</li>
<li>Dried plums (sookha alu bukhara)<span style="white-space: pre;"> </span>15 - 20 soaked in warm water.</li>
<li>Red chili powder 1 tbsp</li>
<li>Coriander powder 2 tbsp</li>
<li>Black pepper (whole) 1 tsp</li>
<li>Cloves 4 - 6</li>
<li>Cardamoms 6</li>
<li>Black cumin seeds (zeera) 1 tsp</li>
<li>Yellow food color 1/4 tsp</li>
<li>Salt to taste</li>
<li>Yogurt (beaten) 1 cup</li>
<li>Warm milk 1/4 cup (add the food color in warm milk)</li>
<li>Ghee/oil<span style="white-space: pre;"> </span>1 cup</li>
<li>Lemon juice of 2 lemons</li>
</ul>

<b>Cooking Instructions:</b></div>
<br />
<ul style="text-align: left;">
<li>Combine mutton or chicken with yogurt, ginger garlic paste, red chili powder, green chilies, coriander powder, chopped mint, lemon juice, dried plums and salt.</li>
<li>Mix well and set aside for half an hour.</li>
<li>Heat oil in a pan and fry sliced onions till golden brown.</li>
<li>Move half of the fried onions to an absorbent paper.</li>
<li>Add the marinated meat to the remaining half onions in the pan .</li>
<li>Cook on low heat without adding water, when the liquid dries fry a little and remove from heat.</li>
<li>Fry the potatoes and tomatoes separately and add both to the prepared curry.</li>
<li>Boil the rice with green cardamoms, black pepper, cloves and salt.</li>
<li>When the rice is half done drain in a strainer.</li>
<li>Put a little oil in the base of a pan and make a layer of half rice. Then put a layer of the prepared curry and cover with a layer of rice, pour the mixture of warm milk and food color on top of it.</li>
<li>Cover tightly and steam on very low heat for 15 - 20 minutes.</li>
<li>Serve hot with raita (yogurt sauce).</li>

Here is a special Dhaba style Mutton Karahi recipe that you can try at home, I don't add water in it. Please do try this at home and let me know how it goes.<br />

<b>Ingredients:</b><br />
<br />
goat/lamb (washed) 1/2 kg<br />
ginger garlic paste 1 tbsp<br />
Oil 1 to 2 serving spoons<br />
tomatoes (chopped) 4 (medium sized)<br />
roasted, crushed cumin 1 tbsp<br />
roasted, crushed corriander seeds 2 tsp<br />
whole spice powder 1 1/2 tsp<br />
turmeric powder 1/2 tsp<br />
lemon juice 2 tsp<br />
red chilli powder 1 tsp<br />
crushed red chilli 1/2 tsp<br />
black pepper powder 1 tsp<br />
salt to taste<br />
green chillies 3,4<br />
fresh corriander 1/4 bunch<br />
fresh ginger 1 inch piece (julian cut)<br />

<br />
<b>Cooking instructions:</b><br />
<br />
Take a wok and heat oil on medium heat.<br />
Add ginger/garlic paste and stir until color changes.<br />
Now add meat and cook for five minutes or unil the color changes.<br />
Now add all the spices (cumin,corriander seeds,whole spice powder, red chilli powder and blackpepper and cook for one minute.<br />
Now add tomatoes, cover the lid and lower the heat.<br />
Let it cook for around 30 minutes or until the meat in tender.<br />
Keep checking and don't add water unless required.<br />
After 30 minutes, remove the lid and stir everything upside down.<br />
You can remove the tomato skin if you want and keep cooking until the mutton is tender.<br />
Now sprinkle 1/2 tsp whole spice powder (garam masala) and add fresh julian cut ginger, chopped green chillies and fresh corriander.<br />
Cook on low heat for another 4 - 5 minutes and serve with hot naan and raita.<br />

This is an authentic Nawabi Hyderabadi Biryani recipe.<br />
Kachi Biryani is one of the very popular and delicious of all Biryanis. It is cooked using slow cooking Dum method. Below is a very special recipe of Kachi Biryani or Hyderabadi Dum Biryani recipe:<br />
<br />
<b>Ingredients:</b><br />
<b><br /></b>
<br />
<ul>
<li>Rice 4 cups or 1 kg</li>
<li>One chicken 12 - 16 pieces or 1 kg mutton</li>
<li>Curd - half cup</li>
<li>red chili powder 2 tsp</li>
<li>Onion 3 - sliced into thin pieces</li>
<li>Ginger/Garlic paste 1 tbsp</li>
<li>oil one cup</li>
<li>salt 1 1/2 tsp or to taste</li>
<li>cinnamon stick - 1</li>
<li>green cardamoms 4 - 6</li>
<li>cloves 4</li>
<li>saffron one pinch or as desired</li>
<li>yellow food color one pich or as desired</li>
<li>fresh mint</li>
<li>fresh coriander</li>
<li>Lemon juice 2 - 3 tbsp </li>
<li>green chilies (small) around 6 - 8</li>
</ul>

For boiling the basmati rice:<br />

<li>black caraway seeds (kala zeera) 1 tsp</li>
<li>cinnamon one stick</li>
<li>salt 1 tbsp</li>
<li>Bay leaf one or two leaves</li>
</ul>

<b>Cooking Method:</b><br />
<br />
<br />
<ul>
<li>Fry onion slices in a wok in one cup of oil until golden brown and take out.</li>
<li>Take a bowl and marinate chicken or lamb with ginger/garlic paste, red chili powder, salt, half of the fried onions, 1/2 cup oil (which was used to fry onions), cinnamon, cloves, green cardamoms, curd, lemon juice, chopped mixture of green chilies, fresh coriander and mint leaves.</li>
<li>Now mix all the ingredients in the bowl and let the chicken marinate for two to three hours.</li>
<li>Boil soaked basmati rice with salt, black caraway seeds (kala zeera), bay leaves, cinnamon and green cardamoms.</li>
<li>Drain the water from rice when they are 1/3 rd done and set them aside.</li>
<li>Now take a bigger cooking pot and add layer of marinated chicken or lamb, then rice.</li>
<li>Pour 2 - 3 tbsp oil on rice (from left over oil which we used for frying the onions).</li>
<li>Sprinkle brown onions, chopped fresh coriander and mint.</li>
<li>Add saffron and yellow food color mixed in water.</li>
<li>Now seal the cooking pot lid tightly and turn the heat on.</li>
<li>Start from flame on high heat for first couple of minutes, once you hear some noise from the pot as it starts cooking, set the flame to low.</li>
<li>Cook on low flame/heat for around 15 minutes it you are cooking chicken, if its mutton cook it for around 30 - 35 minutes.</li>
<li>This special Nawabi Kachi Biryani is served with raita.</li>

As per people of Hunza, their food is their medicine! One of the very famous traditional food from the majestic Hunza Valley is <b>Hunza Bread</b> which is very simple and easy to cook. It is very healthy and yet very tasty on the other end as well. Below is the recipe of Hunza bread if you want to try at home:<br />

Ingredients:<br />
<br />
2 cups water<br />
2 lbs of natural broken wheat or 2 lbs millet flour<br />
3⁄4 cup canola or apricot oil<br />
3⁄4 cup of natural unrefined sugar<br />
8 ounces honey<br />
8 ounces molasses<br />
2 ounces soymilk powder (half cup)<br />
1⁄2 teaspoon sea salt<br />
1⁄2 teaspoon cinnamon<br />
1⁄2 teaspoon ground nutmeg<br />
1 teaspoon baking powder (non aluminium)<br />
6 - 8 dried diced apricots<br />
1⁄4 - 1⁄2 cup raisins<br />

Cooking Method:<br />
<br />
Mix all the ingredients.<br />
Grease and lightly spread flour on cooking pan or baking tray with about 1 inch high sides (12 x 16" cookie sheet).<br />
Pour the batter in the pan half an inch thick over the base.<br />
Bake at about 300°F (150°C.) for an hour. After cooking, dry the bread in the oven for around two hours at a very low heat ~ 90°F (50°C). After it is cooled tip out and cut into approx 2 inch x 2 inch.<br />
This HUNZA DIET BREAD is delicious and it will really help you to lose weight.<br />

<b>Cooking Method:</b><br />
<br />
Soak mash daal for couple of hours in water.<br />
Boil daal in 1.5 cup water, add dried whole red chillies and turmeric.<br />
When daal is done and dry, add salt otherwise if you add salt early in the process the daal takes more time to get done.<br />
<br />
Now in another pan, add ghee and onion. When the onions are half fried, add tomato.<br />
When tomato starts drying. Add chilli powder and whole spice powder (garam masala). Let it cook for couple of minutes.<br />
<br />
Now add this mixture to the other pan having daal.<br />
Sprinkle sliced ginger, green chillies and fresh coriander leaves.<br />
Mix and cook for another couple of minutes, serve with naan.<br />
<br />
Note: Please note that in order to get dhaba style taste daal needs to be well done (well cooked) and dried.</div>

Soak the lentils and red beans in water overnight.<br />
Boil both by adding 1 jug of water.<br />
Cover and simmer for half an hour, until the lentils are tender.<br />
In a pan, melt butter or desi ghee.<br />
Add the onion, chilies, garlic and fry for 7 minutes, stirring occasionally.<br />
Add the salt, turmeric, chili powder, half garam masala, and then add the lentils and remaining cooking water.<br />
Mix and add the ginger.<br />
Fry over a medium heat for 5 to 7 minutes, stirring occasionally, and simmer for 10 - 15 minutes.<br />
Sprinkle over the garam masala and put the remaining butter on top.<br />
Swirl in the milk and sprinkle over the coriander.<br />
Serve with hot bread (naan).<br />

Par-boil rice in salted water with whole all spices.<br />Sieve and set aside.<br />Heat oil, add onions and fry till golden.<br />Take half the onion out on absorbent paper.<br />Then add ginger, garlic, salt, nutmeg and mace, green cardamom, red chili powder, all spices powder, turmeric, coriander and cumin powder in the rest of the onion left in pan.<br />Now add tomatoes and yogurt, cook.<br />Add meat and cook till tender.<br />Apply a pinch of yellow food color on potatoes and fry.<br />Now add fried potatoes, dry plums and green chilies to the chicken, mix.<br />Spread the rice over meat.<br />Drizzle 2 tbsp. oil and 1/2 tsp. yellow food color mixed in screw pine water on top.<br />Sprinkle fried onion, chopped coriander and mint over the rice.<br />Cover tightly and cook on very low heat for 15 minutes.<br />Memoni Biryani is ready to serve.</div>

<li>Let the mixture set in a refrigerator for 2 - 3 hours.</li>
<li>Make flat medium sized patties out of it.</li>

<li>Heat oil in a large pan and fry the onions till golden brown.</li>
<li>Now add chicken and cook till it dries.</li>
<li>Add salt, ginger garlic paste, turmeric powder, red chili powder, all spice powder and stir</li>

<li>Now drain the water from the soaked chickpeas.</li>
<li>Add around three glasses of water and boil chickpeas in a saucepan.</li>
<li>Add bicarbonate soda and cook until the chickpeas are tender.</li>
<li>Add the chickpeas and chopped tomatoes to the pan where chicken is cooking.</li>
<li>Add around two cups of water and keep cooking until the mixture begins to boil.</li>
<li>Lastly add chopped ginger, fresh coriander and white cumin to the pan.</li>
<li>Cover and simmer for five to seven minutes or until the oil separates and come on top.</li>
<li>Serve with hot naans or bread.</li>

<li>Add sugar in a pan with enough water and heat it to form the syrup.</li>
<li>When it starts to thicken add green cardamoms and remove from heat after five minutes.</li>
<li>Beat the egg and add khoya, semolina, plain flour and milk powder into it.</li>
<li>Mix together using your hands.</li>
<li>Add baking powder and clarified butter and knead the mixture, keep aside for 10 minutes.</li>
<li>Make small balls from that mixture (depend on what size you want for your Gulab Jamans)</li>
<li>Add oil in a pan for deep frying and keep it on medium flame</li>
<li>Add the balls in the pan and fry till golden color.</li>
<li>Now dip the balls in the sugar syrup, you can garnish it with blanched pistachios and serve hot.</li>

<li><span style="background-color: white;">Wash and rinse the chickpeas in cold water for couple of hours</span></li>
<li><span style="background-color: white;"> Boil the soaked chickpeas until they are tender.</span></li>
<li>Allow them to cool down.</li>

<li><span style="background-color: white;">Add tahini, crushed garlic, salt, lemon juice and seven tablespoons of liquid from the boiled chickpeas.</span></li>

<strong>Method:</strong><br />
<br />
1- Wash chicken and make deep cuts<br />
2- Apply salt, ginger, and garlic paste and lemon juice<br />
3- Now steam this chicken for 20 to 25 minutes, once done, let it cool down completely.<br />
4- In same bowl (which was used for marinating) put all the remaining spices (except chat masala) in 1 tbsp. ginger garlic paste.<br />
5- Add 1 tbsp. of oil and mix it well, then apply on chicken inside and outside and leave it for at least 15 minutes.<br />
6- Now take a wok, pour oil, heat it up,<br />
7- Now fry chicken in hot oil with the help of a spoon (chicken should be resting on the spoon)<br />
8- Take another spoon and pour hot oil on chicken until it become golden brown.<br />
9- Once done, take it out from oil, sprinkle chat masala on it.<br />
10- Serve hot with bread or rice.</div>

<strong><u>Method:</u></strong><br />
1. Heat 5 cups of water in a big sauce pan because you will need to use a spoon to pour/re-pour the mixture from the top. Once it starts boiling, add 2 tsps. of green tea leaves and cardamoms. <br />
2. Lower the heat to medium and keep boiling for at least 10 - 15 minutes, the mixture will reduce to about half.<br />
3. Add 2 pinches of bicarbonate soda (meetha soda), this will create the pink shade in the Kashmiri tea. Let it boil for about 5 - 10 minutes on medium flame and it will turns dark brown/red color.<br />
4. Take 3 cups of cold water and add it slowly while taking a cup and pouring/re-pouring the tea from height, it will create a slight froth on the top of the tea. Keep doing this for 5 - 10 minutes and you will notice that as you keep on doing it, the color will turn more red. <br />
5. Once the color turns red, add milk to taste (I added about 1 - 2 cups but you can add more); add pinch of salt, sugar to taste.<br />
6. Once color is pink as per your liking after mixing milk you can pour it in team cups/mugs.<br />
6. Add crushed almonds & pistachios for garnishing. You can add fresh cream on top as well. <br />
Please note that authentic Kashmiri tea is salty and they don't add sugar but its up to you if you like it salty or with sugar!</div>

Nihari is considered as most popular dish in Pakistan along with Biryani. Here is how to cook nihari at home (this is old Delhi or Dilli Nihari recipe):<br />

<b><u>Ingredients:</u></b><br />
<br />
beef 1 kg with marrow bones (Nalli)<br />
salt 1 tsp<br />
red chili 1 tsp<br />
turmeric powder 1/2 tsp<br />
crushed corriander 2 tsp<br />
cooking oil 1 serving spoon<br />
ginger paste 1 tbsp.<br />
garlic paste 1 tbsp.<br />
crushed/ground fennel 2 tbsp.<br />
dried ginger (sonth) 1 tbsp.<br />
flour 1/4 cup<br />
cumin 2 tbsp.<br />
black cumin 2 tsp.<br />
<br />
<u><b>Method:</b></u><br />
To cook beef nihari or nehari follow the below instructions:<br />
<ul>
<li>Heat oil in a pot</li>
<li>Add meat and fry it a little.</li>
<li>Add salt, chili powder, turmeric, coriander powder and ginger paste.</li>
<li>Mix it well and add some water, mix plain flour in half cup of water and add this to meat.</li>
<li>Mix all the remaining spices and then add them to meat .</li>
<li>Add 5 - 6 cups of water and cover the pot, leave it on low flame.</li>
<li>Cook it for 5 - 6 hours.</li>
<li>To Garnish fry onion slices in a little oil until it become golden then add it to nehari.</li>
<li>Also garnish it with fresh ginger and green chilies.</li>
<li>Serve with Naans or sheermal.</li>

lamb/mutton kidney 250 grams<br />
lamb/mutton liver 250 grams<br />
lamb/mutton brains 2<br />
yogurt 2 cups<br />
fresh coriander leaves <br />
garlic ginger paste 2 tbsp.<br />
green chili 6 – 7<br />
butter ½ cup<br />
Black pepper 1 tsp. (crushed)<br />
dry Fenugreek 1 tsp.<br />
whole coriander 1 tbsp. (roasted and crushed)<br />
cumin seeds 1 tbsp. (roasted and crushed)<br />
crushed red chili 2 tbsp. or to taste<br />
salt to taste<br />

<strong>Cooking Method:</strong><br />
<br />
1. Wash and cut heart, liver and kidney into small cubes.<br />
2. Boil two cups of water with half teaspoon turmeric (haldi) in a suace pan..<br />
3. Now add lamb brains and boil for 3 to 5 minutes.<br />
4. Heat butter on griddle and add ginger garlic paste, heart, liver, kidney and yogurt in it.<br />
5. Cover and cook for a while..<br />
6. When heart, kidney and liver are tender, then add cumin, red chili, black pepper, crushed whole coriander, salt, turmeric and green chilies and cook well.<br />
7. Now mix in fresh coriander leaves (about 1/2 bunch), fenugreek and brain, cook for 2 to 3 minutes..<br />
8. Dish out and serve hot with naan or bread and raita (yogurt sauce).</div>

<strong>Method:</strong><br />
<br />
1- Mix salt, black pepper, white pepper, mustard powder, red chili flakes, garlic paste, tomato ketchup, egg, bread slice in minced meat and knead well.<br />
2- Mix well and add one tea spoon olive oil.<br />
3- Once mixed well make patties of large size (same size as bun)<br />
4- Fry the patties on medium flame until well done from both sides.<br />
5- Cut the burger buns in half.<br />
6- Add little oil in the frying pan, heat the burger buns in it.<br />
7- Spread some ketchup and mayonnaise on the burger bun<br />
8- Put the fried patty on the bun and place cheese slice over it.<br />
9- Add lettuce and tomato slice over it.<br />
10- Cover it with the other half of the bun.<br />
11- Serve this Pakistani spicy beef burger with French fries.</div>
